Characteristic

Sodium gluconate is a dietary supplement that enhances the taste due to the sensitivity of the receptors on the tongue to the substance. It dissolves well in water at a certain temperature. It interacts well with other substances, in particular calcium ions, forming chelated compounds with them. Additive E 576 is resistant to hydrolysis and is stable in alkaline media. It has disinfectant properties and removes mineral and organic deposits.

Outside the food industry, sodium gluconate reduces moisture and improves the plasticity of concrete and other construction mixtures, corrosion inhibitor is in ferrous metals (cast iron, steel).

Use

The additive E 576 is used in the food industry, as well as in the production of detergents. Sodium gluconate is found in paint removers, rust removers, alkaline glassware solutions, and construction mixtures. The substance is used in the oil industry for concreting wells (adding the substance to the working fluid improves its properties). It is also used in metallurgy in the production of aluminum for etching metals.

Impact on humans

In small quantities, E 576 does not harm human health, but in some cases has an adverse effect on the cardiovascular system, including provoking the development of hypertension. Allergic reactions may occur.

As a dietary supplement , sodium gluconate is considered safe and may be added to food.
