Sodium inosinate is a white or colorless crystal or white crystalline powder. The additive has no specific odor, is characterized by a characteristic pronounced taste. Its solubility in water is good, in ethanol - medium, and in ether it does not dissolve in practice. The substance is found in various fungi, also in the tissues of animals and fish (mostly marine). E 631 is synthesized in an industrial medium during glucose fermentation.

Use

Sodium inosinate enhances the taste and aroma of a number of products that have deteriorated after heat treatment or storage. In its pure form, the additive is not used. A mixture of sodium inosinate and sodium guanylate with monosodium glutamate is commonly used in the food industry. E 631 is most often found in meat products, sausages, canned food, in semi-finished soups and broths.

Impact on humans

People who are allergic, suffering from gout and rheumatism, asthmatics, should be very careful when eating foods containing the substance, because it is able to exacerbate the disease. It has been found that the supplement, although safe, can cause gastrointestinal disorders to varying degrees. The maximum permissible daily dose of E 631, harmless to humans, is not indicated.
