Necessary products:

 

  • 4 tea cups arugula
  • 1 avocado
  • 1 diced tomato
  • 2 sprigs of fresh onion
  • 7-8 cleaned shrimps
  • 2 chopped garlic cloves
  • 2 sprigs of fresh oregano
  • 6-8 basil leaves
  • 2 tablespoons olive oil
  • 30 milliliters of white wine
  • pinch of salt
  • lime juice

 

for orange vinaigrette:

 

  • 4 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons balsamic vinegar
  • juice of half a lime
  • a pinch of salt and pepper

 

Method of preparation:

 

In a pan, heat olive oil, fry the shrimp, season them with garlic, oregano, basil, pour the wine, lime juice and salt.

Leave the simmering mixture on low heat until the liquid is reduced and cool. Meanwhile, prepare the salad. Wash, dry and chop the arugula, tomatoes and avocados. Add the chopped fresh onion.

Put the vegetables in a bowl, add the prepared shrimp. In a blender, mix all the dressing ingredients and beat until smooth. Serve the salad cold, garnished with the resulting orange vinaigrette.

3 tablespoons butter

Return the shrimp to the pan, add the cucumber, tomatoes and olives.
