1. Air buns in the form of roses (Celtic brioche)

 

Delicate and fluffy yeast dough buns are incredibly beautiful due to unusual molding. In autumn, such pastries are what you need!

Bun Ingredients:

350 g flour; 21 g fresh yeast or 7 g dry; 2 egg yolks; 140 ml of milk; 60 g sugar; 10 g vanilla sugar; 70 ml of refined oil; a pinch of salt; 2 tbsp. l. powdered sugar; a little protein for greasing buns.

For dough, combine warm milk, yeast, a teaspoon of sugar, yolks and 2 tbsp. l. flour. As soon as the foam appears, add all the remaining sugar, mix until dissolved. Then add salt, vanilla sugar. Pour in vegetable oil, gradually, mixing, introduce flour. Knead a light and uncooked dough, gather into a lump and leave under a towel for 40 minutes.

 

Punch down the risen dough with your hands. Roll out into a layer, half a centimeter thick. Cut out circles with a glass (diameter - 8 cm). Lay three circles overlapping until the middle of the next. Roll into a narrow roll and cut into two parts in the center. Place cut side down and spread the petals to form a rose. Do the same for the entire test.

Place three roses on a baking sheet lined with parchment, connecting them. Lubricate with whipped protein and bake for 20 minutes at a temperature of 170 degrees. Grill for the last 5 minutes.

2. Homemade plum marshmallows

 

We cook homemade marshmallows only on agar-agar; gelatin will melt in heat and such marshmallows will not retain their shape.

For marshmallows from plums you will need:

400 g pitted plums; 400 g of sugar; 100 ml of water; 11 g of agar-agar; 3 art. l. powdered sugar.

Soak agar-agar in water for an hour. Pour washed and pitted plums with a few tablespoons of sugar in a saucepan, leave for 10 minutes so that the plums release juice. Then put on a slow fire and cook for 20 minutes after boiling water without water. Stir occasionally, do not cover. Remove the plums from the heat, strain through a sieve and pour back into the pan, add 200 g of sugar and boil for 5 minutes. Cool down.

Pour the plum billet into a tall bowl or mixer bowl, turn on the mixer to maximum speed and add the chilled protein. The mass will increase by 2-3 times and become denser.

Pour agar-agar into a saucepan, bring to a boil and add the remaining sugar. Boil the syrup after boiling for 5 minutes, stirring constantly. The temperature of the finished syrup should be 110 degrees, if there is no thermometer, then focus on a thin thread flowing from a spoon. Cool down.

Cover wooden planks with cling film. Start whipping the plum mass at maximum speed, then pour in agar-agar in a thin stream. The mass will become thick, lush. While warm, transfer to a piping bag and pipe marshmallows onto prepared boards. Dry marshmallows for 8-10 hours, then sprinkle with powdered sugar. Glue two marshmallows upside down. Ready!

3. Cottage cheese rings with cranberries

 

Soft sweet pastry with cranberry sourness. Curd sweets are always ideal for tea drinking.

For curd rings you will need:

200 g flour; 350 g of cottage cheese; 200 g butter; 50 g fresh, frozen or dried cranberries; 70 g of sugar; 3 art. l. lemon juice; 2 tbsp. l. sour cream; 1 tsp baking powder; vanillin to taste.

Cut the butter into cubes, melt and cool, pour into a bowl. Whip with cottage cheese and sugar. Add cranberries, lemon juice, sour cream, vanilla. Stir. Then gradually add the sifted flour with baking powder. Roll out (thickness - about a centimeter) and cut out rings with two glasses. Place on parchment lined baking sheet and sprinkle with sugar. Bake in the oven for 25 minutes at 180 degrees.

4. Pie with apples and plums

 

Easy and quick to prepare pie with a juicy filling of plums and apples. Apples and plums can not be peeled from the skin, it's even faster.

Pie Ingredients:

200 g flour; 150 g sour cream; 60 ml of vegetable oil; 180 g of sugar; 2 eggs; 1 tsp baking powder; a couple of pinches of breadcrumbs; 2 apples; 6 plums; powdered sugar to taste.

Beat eggs with sugar until fluffy, add sour cream and vegetable oil. Then add the sifted flour with baking powder. Rinse apples, remove seeds, cut into slices. Grease the form with oil and sprinkle with breadcrumbs or cover with parchment. Lay out the apples, pour over the dough, press the halves of the pitted plums on top with the cut side up. 5. Pumpkin with honey and nuts in the oven

 

An interesting dessert of baked pumpkin with honey and walnuts! Serve with a scoop of ice cream.

Dessert Ingredients:

500 g of peeled pumpkin; 50 g walnuts; 30 g of sugar; 1 st. l. honey; 30 g butter; salt to taste.

Cut the peeled pumpkin into slices, put on foil, salt, wrap and send in the oven, heated to 180 degrees, for 20 minutes.

Melt the butter in a saucepan, add honey, walnuts, sugar. Bring to a boil while stirring, then remove from heat.

Open the foil with the pumpkin, pour the sweet-nut mixture over the contents, cover again and place in the hot oven for another 10 minutes.

270 g flour; 250 g butter; zest and juice of one lemon; 10 g vanilla sugar; 150 g of sugar; 4 eggs; a pinch of salt; 1.5 tsp baking powder; 7 medium apples; half a spoonful of cinnamon.

Beat butter with sugar, vanilla sugar and lemon zest. Continuing to beat, add the eggs. Then add, stirring, the sifted flour with baking powder.

4 apples, peeled and seeds, cut into cubes and mix with dough. Peel the remaining apples, cut into slices and sprinkle with lemon juice.

Turn on the oven to heat up to 190 degrees. Cover the form with parchment or grease with vegetable oil. Pour the dough with apples, smooth. Arrange apple slices on top, sprinkle with cinnamon. Bake 50 minutes.

For the cake you need:

225 g flour; 200 g of sugar; 200 g of cottage cheese; 2 pears; 1 g vanillin; 115 g butter at room temperature; 3 eggs; half a spoonful of baking powder.

Beat butter with sugar and vanilla. Enter the eggs while continuing to beat. Add cottage cheese mashed through a sieve or beat cottage cheese with egg mixture with a blender. Stir in sifted flour with baking powder. Pour the batter into an oiled cake pan. Insert slices or semi-circles of peeled pear into the dough so that the edges stick out a little. 8. Cupcake with pumpkin and nuts

450 g pumpkin; 275 g flour; 200 g of sugar; orange; 3 eggs; a handful of walnuts or other nuts; 200 ml of vegetable oil; 10 g baking powder for dough; 1 tsp soda; 1 g vanillin; 1/4 tsp. ground cinnamon, ginger, cloves; a pinch of ground nutmeg; a pinch of salt.

Boil the pumpkin in a small amount of water until soft, drain the water, mash the pumpkin into a puree.

Beat eggs with sugar and vanilla until foamy, add butter and beat again. Mix the mass with pumpkin puree. 

In a separate bowl, mix dry ingredients: flour, baking powder, soda, salt, cinnamon, ginger, cloves, salt and nutmeg. Add to bowl with main mixture. Grate the orange zest there and squeeze the juice. 9. Roll with poppy seeds and plums

 

An incredible combination of plums and poppy seeds in the dough, awesome pastries and a luxurious aroma! Be sure to try!

Dough Ingredients:

250 g flour; 20 g fresh yeast; 40 g of sugar; a pinch of salt; 120 ml of milk; egg; 50 ml sunflower oil.

Filling Ingredients:

150 ml of milk; 60 g sugar; 20 g vanilla sugar; 1 tsp lemon peel; half a spoonful of cinnamon; 200 g poppy; 300 g plums; 2 tbsp. l. Roma.

First we prepare the dough. Heat milk to 40 degrees. Pour into two bowls. In one bowl, add a tablespoon of sugar and yeast, 2 tablespoons of flour, in another - an egg and the remaining sugar. Mix the contents of both bowls. Leave for 20 minutes.

Sift the flour, add salt, pour in the yeast and egg mixture, mix. Pour in the oil. Knead the dough, gather in a lump and cover with a towel, leave warm for an hour.

We are preparing the stuffing. Boil milk with sugar, vanilla sugar, cinnamon and zest. Add poppy seeds ground in a coffee grinder. Cook for a few minutes, stirring, add rum.

Wash the plums, select the stone. Cut finely.

Roll out the risen dough into a rectangle measuring 30 by 40 cm. Distribute the poppy seed filling, leaving a couple of centimeters around the edges. Put plums on the poppy. Roll into a roll. Pour into a greased cake tin and seal the edges. Leave for 20 minutes and then bake for 40 minutes at 180 degrees. Cool the finished cake and sprinkle with powdered sugar.
