If you like cold soups, then you should definitely give the gazpacho a chance to enter your menu. This cold summer soup is traditionally made from ripe tomatoes, ground with cucumbers, onions and garlic. All seasoned with vinegar and olive oil. 

The traditional gazpacho was thickened with dried bread, which is why the soup is often served this way. You can add or skip the bread, depending on how dense you prefer the gazpacho.

These are the main ingredients for gazpacho. However, if you want the cold soup to have a richer taste, add red pepper and other vegetables of your choice; play with spices to add a unique flavor to the dish.

Important:

  • If you prepare the gazpacho in a  blender type grinder , the soup will have a more interesting texture, it will not be so smooth
  • The blender-type blender  will make the gazpacho smoother and velvety

Fennel or the so-called wild dill, for example, can add an interesting touch to a traditional gazpacho.

 

Method of preparation:

  1. In a bowl, chop the bread into large pieces, then squeeze the peeled tomatoes by hand. Then leave the tomatoes with the bread and let the mixture stand for 20 minutes.
  2. Blend the tomatoes and bread until thick
  3. Add cucumber, onion, garlic, red pepper, vinegar
  4. Blend well until a homogeneous mixture
  5. While the blender is on at low speed, add a thin stream of olive oil. This will mix better with the soup
  6. If you want the soup to be thinner, add water
  7. Once the soup is ready, season to your liking. 
  8. Leave the gazpacho in the refrigerator to cool before serving

Recipe for green gazpacho soup

Gazpacho recipes, like all others, evolve over time. So it is no surprise that this summer soup has many and varied options. Learn how to make green gazpacho soup.

Necessary products:  2 medium cucumbers, 3 green combs (or peppers), 4 green onion stalks, 2 medium hot peppers (without seeds), 2 tbsp. garlic, about 100-125 g of bread of your choice, 1/4 tsp. vinegar, 2 tbsp. lime juice, 1 1/2 tsp. yogurt, salt and pepper to taste

Note:  In this recipe you can also put the tomato vegetable, which is a little harder to find in our country. If you still find, put 2 pcs. tomato

Method of preparation:

  1. Mix vinegar, lime juice, 1 tsp. yogurt and 1/2 tsp. olive oil in a large bowl. Stir until smooth.
  2. In this mixture put the bread, cut into pieces, as well as vegetables. Mix well, cover the bowl and let the products taste for about 4 hours in the refrigerator.
  3. Then grind the products in a blender until smooth. Season with salt and pepper.
  4. If you want the soup to become thinner, add the remaining yogurt
  5. When serving, pour a little olive oil and a little red pepper for a richer taste and effect

Recipe for yellow-orange gazpacho soup

Necessary products:  1 orange, 2 large yellow cambi, 1 cucumber, 1 onion, 1 tbsp. garlic, 1/4 tsp. olive oil, 1/4 tsp. vinegar, hot Tabasco sauce optional (a few drops)

Optional:  green onions, yellow kamba, a slice of tomato for serving

 

An easy recipe for gazpacho

We start with an easy and traditional recipe for gazpacho. Here are the necessary products and how to prepare it.

 

Necessary products:  750 g of ripe tomatoes, 1 cucumber, 1 onion, 1 red pepper, 2 tbsp. garlic, 2 tbsp. vinegar, 1/4 tsp. olive oil, salt and pepper to taste, 2 slices of bread (bread should not be fresh, but rather a day or two. It is also recommended to be of the type "rustic" or home-baked)
