Researchers at Purdue University have studied the effects of various juices and creams on the catechins contained in tea. They have antioxidant properties. It is citrus juices and vitamin C in general that increase their level in tea.

It is believed that catechins are responsible for the beneficial effects of green tea. They reduce the risk of cancer, heart attack, stroke. Experts say catechins are unstable in low acidity environments such as the gut. Citrus juice provides a low pH, which ensures good absorption of catechins. Lemon has the strongest effect, research says.
