How to properly bread in flour and breadcrumbs

Breading is an important process of processing food before cooking. Breading not only contributes to the formation of a delicious appetizing crust on the products, but also preserves their juiciness and adds an extra taste to the dish. Breading dries the surface of the fried foods, prevents them from absorbing a lot of fat, and protects the foods from intense heat.

From the same product, you can cook dishes of different tastes, changing the breading or enriching it with zest, herbs, herbs, grated cheese, spices.

The simplest breading is flour. It is enough just to thoroughly roll the products in flour and you can fry it. In other cases, in order for the breading to adhere tightly to the products, they are moistened in oil, eggs or lezon (a mixture of eggs and dairy products). Preparing lezon is quite simple. To do this, lightly beat the eggs with a small amount of dairy products and spices. When breading products, consider some features:

- before breading, dry the products with a napkin;

- to prepare a lezon for 1 egg, take 1 tablespoon of dairy products and 1 pinch of salt, spices;

- to prepare a thick crust, you can make a double or even triple breading;

- before frying, leave the breaded products for 5 minutes for better adhesion of the breading;

- Fry breaded foods in a well-heated pan.

For example, let's cook crispy breaded zucchini in a pan. The recipe is very simple and does not require much effort.

Step 1

 

To prepare breaded zucchini, we need lezon, breadcrumbs, flour, paper napkins and fresh zucchini.

Step 2

 

If the product we are going to bread is too wet, remove excess moisture by blotting with a napkin.

Step 3

 

For work, we need a lezon. Liezon is a mixture of eggs, dairy products, salt and spices (optional). For 1 egg, take 1 tablespoon of dairy products and 1 pinch of salt. Lightly whisk with a whisk until a homogeneous mass is formed.

Step 4

 

For convenience, place breadcrumbs, lezon, flour nearby.

Step 5

 

Dredge the food on all sides in flour and shake off excess flour.

Step 6

 

Dip the floured zucchini pieces into the ice cream. Lezon should be on all sides of the product. Raise the pieces of the product and allow the excess lezon to drain.

Step 7

 

Thoroughly coat the zucchini slices in breadcrumbs. To get a thick crust, the products can be re-dipped in the seasoning and breadcrumbs. This will be a double coat.

Step 8

 

Leave breaded zucchini in breadcrumbs for 5 minutes.

Step 9

 

Breaded zucchini should be fried in a well-heated frying pan with a sufficient amount of vegetable oil (4 tablespoons) until tender.
