Required products :

  • 3 1/3 tea cup flour
  • 1 teaspoon vanilla sugar
  • 1 teaspoon salt
  • 1/4 teaspoon sugar
  • 1 large egg + 1 yolk to spread
  • 1/3 tea cup cold milk
  • 20 grams of fresh yeast or 9 grams of dry
  • 1/2 or 1 teaspoon cinnamon
  • 50 grams of soft butter
  • 1 tablespoon honey
  • 1 peeled and grated green apple
  • sesame or poppy seeds for sprinkling

Method of preparation :

Add the fresh yeast to the milk, stir with an egg whisk, add the beaten egg with a fork, honey, the grated apple together with the juice and mix everything.

You should pour the sifted flour, sugar, cinnamon, vanilla sugar. Stir, gradually adding the butter. Add salt and knead the dough once more. Knead until smooth, it should not stick to your hands. If necessary, use a little more flour, which you add gradually.

Shape the dough into a ball and leave it in a warm place. When it has doubled in volume, start baking. You can put in a bowl, cover with plastic wrap and leave in the refrigerator overnight.

Roll out the dough on a plate sprinkled with flour. If it is too tight, leave it for a while to relax (about 20 minutes).

You should knit loaves from it or shape to choice, smear the surface with beaten with 1 teaspoon of water the yolk. Wait for the dough to rise in a warm place, spread again with egg yolk, sprinkle with sesame or poppy seeds and bake at 200 degrees for the first 15 minutes. Then reduce the temperature to 180 and bake for another 20 - 25 minutes, until a golden-brown crust forms.
