Method of preparation:
Pour the peeled fruit in a suitable container in layers, filling each layer with sugar. Leave for 4 - 6 hours at room temperature. Once they release the juice, transfer to a brass pan and place on the hob. Cook over low heat, stirring lightly several times to dissolve the sugar well in the resulting juice. Once the sugar has dissolved, increase the temperature and leave the jam to cook for 15 - 20 minutes after boiling, if you put 1.5 kg of sugar per 1 kg of fruit and 20 - 25 minutes if the sugar used is 1.3 kg. If the fruit is large, remove the pan from the heat after 30 minutes and then bring to a boil once more.
During cooking, a large amount of foam is formed, which does not need to be removed. At the end of the process add 1-2 grams of citric acid per 1 kg of sugar.
Close in jars.
