Often an egg is added to the batter. The simplest liquid is water, but chefs often replace water with milk, beer, sparkling water, wine. Replacement depends on what foods are being fried.
For example, if you are going to prepare a batter for frying fish, shrimp or squid, then you can use beer or white wine. For frying chicken fillet, meat or chops, red wine or vodka is added to the batter. As fragrant additional components, spicy herbs, spices, grated cheese, chopped nuts are used in the batter. In general, the composition of the batter is a huge field for experimentation.
The amount of batter depends on the amount of food you are going to fry. The density of the batter also depends on your desire: liquid batter forms a thin crust when frying, and thick batter forms a thick one. As a rule, batter is prepared by thoroughly mixing all the ingredients with a whisk.
Sliced products, before wrapping in batter, dry well, otherwise the batter will drain. Sometimes products are pre-rolled in flour. In this case, the batter clings well to the product.Fry foods in batter immediately, putting them on a well-hot frying pan with vegetable oil. Remember that in the pan, between the fried pieces, there should be free space, the pieces should not stick together during frying. Otherwise, when separating the slices, you will damage the crust and the juice from the middle of the slices will begin to flow into the pan. This will make the food less juicy.
