Required products :

  • 100 grams of old beans
  • 2 beets (medium size)
  • 100 grams of prunes
  • 2 tablespoons oil
  • olive oil for dressing
  • 3 cloves garlic
  • 1 teaspoon sesame seeds
  • salt and pepper to taste


Method of preparation :

Soak the old beans in water for eight hours, then rinse with clean water and cook until done (about an hour).

 

Wash the beets, dry them and cut them into cubes.

 

Sprinkle with oil and bake for thirty minutes in a preheated oven to 200 degrees.

 

Drain the cooked beans from the liquid by pouring them into a colander. When the beans have cooled, mix them with the diced roasted beets.

 

To this combination add the finely chopped and dried prunes, which you have previously soaked in boiling water for 10-15 minutes. Add the crushed garlic cloves.

 

Season the salad with olive oil, ground pepper (black) and salt. Serve hot, sprinkled with sesame seeds.
