Required products :

  • 240 grams of beans
  • 3 thin slices of bacon
  • 1 teaspoon chopped onion
  • 2 stalks of celery - cut
  • 4 cloves garlic - finely chopped
  • 4 teaspoons chicken broth
  • 1 bay leaf
  • 1 teaspoon lemon juice

 

Method of preparation :

Pour cold water over the beans and leave to soak overnight.

Fry the bacon until crispy and chop.

In a saucepan, fry the onions, celery and garlic until soft.

Add the beans and chicken broth, finally add the bay leaf.

Boil for 2 hours, and if necessary add a little water.

When the beans are ready, remove the bay leaf.

Blend 1/2 cup of the soup and return to the pot, this will thicken the soup.

Season with salt, pepper and lemon juice.

Serve garnished with parmesan and pieces of bacon if desired.
