Required products :

150 grams of beans

100 grams of frozen corn

1 red pepper

1 stalk of celery

1 large onion

3 cloves garlic

parsley

1/2 liter of vegetable broth

2 tablespoons olive oil

1 bay leaf

1 teaspoon dried oregano

salt and pepper to taste

 

Method of preparation :

Soak the beans in water overnight or for several hours. Then drain the water, fill it with clean and cook until done. Drain the water again (save it) and start preparing the other products.

Thaw the corn, chop the garlic in bulk and the onion and celery into small pieces.

Peel a squash, grate it and cut it into small cubes.

Heat olive oil and fry onions, garlic, peppers and celery in it until soft over low heat. Season with salt and pepper. Finally add the oregano and stir.

Pour the beans over the vegetables, stir and transfer everything to a saucepan. Pour the broth and half of the water in which the beans were boiled.

Add salt to taste and warm. Add the corn and bring the soup to a boil. When this happens, put the bay leaf and let the dish cook over low heat for 15 - 20 minutes (until the corn is ready).

Distribute in suitable bowls, sprinkle with chopped parsley and serve.
