In order not to turn green beans into snot, it is enough to follow a few main tips:

Using fresh beans, rinse them several times with cold and hot water, alternately, before cooking. So it will become more susceptible to temperature changes. This step is completely optional.

 

Before boiling green beans, be sure to salt the water. It is better to make it with edible sea salt, it is mineral and tightly fastens the bean fibers. Try not to overdo it. When raw, green beans are cooked for no more than 5-7 minutes, and for frozen, it will take a little more time, about 10.

Red and white beans

Red and white beans are usually pre-soaked. Soak beans usually like this: a glass of beans is poured with five glasses of water, put in the refrigerator for 12 hours. Then washed with running water. Spread the beans in a large pot, pour water so that it covers the beans and simmer, adding water as needed. It is not necessary to cover the pan with a lid, it is also not worth stirring. Boil the beans until tender, 30 minutes to 2.5 hours, depending on size and variety.

You can soak beans in another way that will save time. Pour a glass of beans in a large saucepan with 5 cups of water, bring to a boil over high heat, then remove from heat and leave covered for an hour. Then cook as described in the previous method.

 

You can salt red and white beans during cooking at any stage.

Red and white beans can also be cooked in the microwave on the highest setting for about 30 minutes, but only if the beans have been soaked for at least 6-7 hours and are already soft enough. It should be noted that this should be done only in extreme cases, since all useful vitamins and minerals disappear, and there is no benefit in such beans.

Delicious dishes with beans

1. Salad with green beans and carrots in Korean

 

To prepare the salad you will need:

a handful of green beans; a handful of carrots in Korean; 10-12 small canned champignons; a handful of canned asparagus, 100-120 g of smoked breast, a clove of garlic; mayonnaise or natural yogurt to taste; spices to taste.

Boil beans and cool. Cut the champignons, asparagus and smoked breast into cubes, mix everything with Korean-style carrots, garlic, beans, passed through a press, season with mayonnaise or yogurt and season with spices.

2. Red Bean Pate

 

Red bean pate is very tender and tasty, perfect for holiday snacks.

Ingredients:

2 cups boiled beans or a large can of canned; red onion; 2 cloves of garlic; 2 medium carrots or one large; chilli; 2 tbsp. l. olive oil; 100 g butter.

Boil the beans (they should be easily crushed with your fingers). In parallel, finely chopped red onion, garlic, carrots and chili peppers are fried in olive oil. When the beans are cooked, transfer them to a blender along with the frying, add a large piece of butter (about 1/1 ratio) and grind until smooth. At this stage, you need to add all your favorite spices, try and grind again. Serve with toasted baguette and herbs.

3. White bean soup with cod

 

You will need:

half a glass of beans; 2 large carrots; fillet of one cod; shallot; bulb; 2 medium potatoes; bell pepper; salt, pepper, herbs, lavrushka to taste.

Boil the beans until tender (check for taste), while boiling the cod fillet with one carrot and shallots. When the broth in which the fish is boiled boils, take out the fish, vegetables (they will no longer be useful), strain the broth and put it back on the fire, throwing finely chopped potatoes, chopped fish and beans into it, cook over low heat. Make a frying of carrots, onions and bell peppers, and after boiling the broth, send it to the rest of the ingredients. Boil the soup for 20-25 minutes.

4. Creamy stew with white beans, vegetables and shrimp

 

Ragout Ingredients:

a glass of white beans; 2-3 tbsp. l. olive or other vegetable oil; red onion; 2 medium carrots; 6-8 Brussels sprouts; 3 cloves of garlic; 200 g of peeled shrimp; 40 g butter; 200 ml of heavy cream; 60-80 g cream cheese; greens to taste; salt and spices to taste.

Boil white beans. In parallel, fry finely chopped red onion, carrots, Brussels sprouts, garlic and shrimp in olive oil. When the vegetables are fried, add butter, 25% cream and a piece of cream cheese, stir until smooth and pour the beans. Stew the stew over low heat for 10-15 minutes, decorate with herbs and breadcrumbs before serving.

5. Quail stuffed with red beans and bell peppers

 

You will need:

2-3 quails; half a glass of beans; bell pepper; 2 small red onions or one large; 2-3 cloves of garlic; salt and spices to taste; 100 g curd cheese; 2 spoons of honey; 3 art. l. soy sauce; 100 g of cheese; greens to taste.

Boil the beans. We clean the quails from the insides and rinse well. Fry chopped bell pepper and red onion in a pan, add garlic and spices to taste. We mix beans with frying and any curd cheese, stuff quails, grease with honey and soy sauce, send to the oven for 40-50 minutes. 5 minutes before readiness, sprinkle with grated cheese and herbs.
