Necessary products

  • 350 grams of beans, peeled
  • 3 tablespoons olive oil
  • 450 grams of cherry tomatoes, halved
  • 5 green onion stalks, finely chopped
  • 2 minced garlic cloves
  • 5-6 anchovy fillets, finely chopped
  • 2 tablespoons chopped fresh parsley

 

Method of preparation

Blanch the cleaned beans in boiling water for a minute. Drain and rinse with cold water to cool them quickly. Drain again. Peel a squash, grate it and squeeze the juice.

Heat olive oil in a pan, add cherry tomatoes. Fry them until they shrink and their juice flows. Add green onions and garlic and cook for another 2-3 minutes.

Put the beans in the pan and fry for another 2-3 minutes, stirring constantly. Add the anchovies and cook until slightly browned.
