Required products :

  • 1 kg of beef fillet
  • 1 teaspoon salt
  • 1 teaspoon ground red chili pepper
  • 1 tablespoon cumin
  • 9 cloves garlic

 

Method of preparation :

Wash and towel dry the beef. The piece of meat should not be too thin, because after drying it will look like a sole.

Roll the fillet in salt and let it stand for 10-15 minutes at room temperature, then clean it of all excess salt.

Put it in a deep bowl and put some weight on it. Refrigerate for a day.

Then remove the weight, wrap the meat in gauze and hang to dry in a well ventilated place (where there is air flow) for 4-5 days.

Mix the cumin with the garlic and red pepper. Of course, you could use other spices in appropriate quantities to be enough to flavor the whole piece of beef.

After 4-5 days after the meat is allowed to dry, remove the gauze and roll the fillet on all sides in the mix of aromatic spices (you can rub it with your hands).

Wrap in aluminum foil and leave for 4 days at room temperature.

Before serving, remove the excess from the spices and cut the pastrami into thin (transparent) pieces.
