Required products :

  • 1/4 tea cup white or brown rice
  • 3/4 tea cup of water
  • 1 shallot, peeled and cut into four
  • 1 large red beet, peeled and cut into quarters
  • 1 teaspoon canned black beans, drained
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 tablespoons parsley
  • 1 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 loaves
  • 1 cup arugula or other green salad of your choice
  • garlic tahini sauce

Required products :

Bring water to a boil and add rice to it, reduce the temperature and wait for it to boil on low heat for about 15 minutes. Allow it to cool.

Turn the oven to 200 degrees to warm up.

Prepare the beetroot burger by placing the onion and red beetroot in a food processor and slicing them. Continue until you get a puree in which you can still feel larger pieces of vegetables.

Transfer to a bowl and add the egg, breadcrumbs, parsley, cumin, pepper and salt. Knead and shape 4 large meatballs or 8 smaller ones.

Line a tray with paper and place the meatballs. Bake for 15 minutes, then turn and bake for another 15 minutes. If you want, you can also make them in a pan.

Cut the loaves and put a meatball in each. Place some of the arugula on top and pour over the garlic tahini sauce.
