How To Cook Biscuit Rolls With Pistachios And Blueberries - Recipe

Required products :

  • 1 1/4 tea cup cleaned pistachios
  • 2 tablespoons white sugar
  • 3 tablespoons melted butter
  • 1 1/4 cup dried cranberries
  • 1 teaspoon butter at room temperature
  • 1 cup sifted powdered sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup white sugar
  • 1 egg
  • 2 1/2 teaspoons flour

Method of preparation :

Grind the pistachios until smooth, if some particles remain larger, this is not a problem, it is important that most of them are finely ground.

Mix with 2 tablespoons of sugar, pour the melted butter and mix well. Grind the blueberries, then add them to the nuts.

Mix the soft butter and sifted powdered sugar with the vanilla, baking powder, salt and 1/2 teaspoon of white sugar. Beat with a mixer until white, fluffy mixture for 2-3 minutes. Add the eggs after they are absorbed from the mixture, add the flour, stir on low on the mixer.

Transfer the dough to a well-floured sheet of baking paper and roll out into a rectangle. Sprinkle with blueberries and pistachios, and smear the edges with water, then roll up. Wrap in foil and freeze for 1 hour, or refrigerate between 4 and 8 hours.

Preheat the oven to 175 degrees, line a baking tray with paper or put a silicone baking tray, if you have one.

Cut the roll into 12 slices, arrange them in the pan and bake for 13-15 minutes until they start to turn slightly pink.

Cool for 10 minutes in the pan, then transfer to a convenient place to cool completely.
