Required products :

  • 1/4 tea cup butter
  • 3/4 tea cups white crystal sugar
  • 1 tablespoon orange peel (finely grated)
  • 1/2 teaspoon vanilla extract
  • 2 whole eggs + 1 egg white
  • 2 teaspoons flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 50 grams of white chocolate - chopped
  • 1/2 cup dried cranberries
  • 1 1/2 teaspoons pistachios

Method of preparation :

Beat the butter, sugar, orange peel and vanilla with a mixer until you get a smooth fluffy cream. Add the egg whites and eggs one at a time, beating after each until completely absorbed.

Sift the flour with the salt and baking powder and gradually add it to the cream, stirring with a spatula. Add the chocolate, dried blueberries and pistachios, knead and cover with foil. Leave the dough in the fridge for 30 minutes.

Preheat oven to 165 degrees and cover pan with parchment paper.

Put the dough on a floured kitchen counter and divide it into 2 parts.

Form each of them into a long flat roll 30 centimeters long and 8 centimeters wide.

Put the two rolls in baking paper at a distance of 6-7 centimeters from each other.

Bake for 30 minutes until golden. Allow the rolls to cool briefly on a wire rack until you can feel them safely. Cut them into diagonal slices 2 cm thick.

Arrange them lying in the tray. Bake for 15 minutes until golden.

Remove the cookies from the pan and allow to cool completely to room temperature. Store in a tightly closed container.

Garnish with a little melted white chocolate.
