How To Cook Burger With Pork Fillet, Aioli Sauce And Fennel Salad - Recipe

Required products :

for meat :

  • 1 tablespoon smoked red pepper
  • 2 cloves garlic, chopped
  • 2 tablespoons olive oil
  • 400 grams of pork tenderloin

for the salad :

  • 1 head of fennel, thinly sliced
  • 1/2 red onion, cut into thin crescents
  • 3 pickles, cut into small cubes
  • 2 tablespoons pickle juice
  • 1 tablespoon olive oil

for Aioli sauce :

  • 2 tablespoons quince paste
  • 5 tablespoons mayonnaise
  • 1 clove garlic
  • 2 loaves, cut in half

Method of preparation :

Preheat oven to 200 degrees.

Combine the smoked red pepper with 2 cloves of garlic, 2 tablespoons of olive oil, spices and season the pork fillet. Put the meat in a pan covered with baking paper and bake for 15 minutes. Turn and bake for another 12-15 minutes or until done.

Mix the fennel, red onion, pickles and juice with the remaining 1 tablespoon of olive oil and spices to taste.

For the Aioli sauce, blend the quince paste with the mayonnaise and garlic clove in a food processor.

Remove the meat from the oven, let it rest for 5 minutes and cut into thin pieces. Fill the loaves with pieces of roast pork, aioli sauce, fennel salad and serve.
