Required products :

  • 1 teaspoon sugar
  • 10 eggs
  • 1 teaspoon vanilla extract
  • 4 teaspoons fresh milk

for the next layer:

  • 5 eggs
  • 1/2 teaspoon sugar
  • 2 tablespoons oil
  • 1 tablespoon rum extract
  • 1 teaspoon flour

Method of preparation :

Put 1 tea cup of sugar in a pan with a fireproof handle and leave on the stove to caramelize.

Set aside the caramel to cool slightly as in the pan.

Beat the 10 eggs in a large bowl and add the vanilla. Add the milk in a low stream, stirring constantly. Once the ingredients are combined, pour the mixture over the caramel. Bake in a water bath for 20 minutes at 180 degrees. Remove the cake from the oven, but do not switch off the appliance.

For the second layer, separate the egg white from the egg yolk. Beat the egg whites in the snow. Add the sugar to them and stir until soft peaks are obtained. Continue stirring and add the egg yolks, oil and rum. Finally add the flour and combine again for 2-3 minutes.

Carefully pour the mixture over the already toasted caramel cream. Flatten and bake again for 20 minutes (on a water bath).

Cool completely before turning the caramel cake in a suitable dish.
