How To Cook Casserole With Leeks, Pumpkin And Parsley - Recipe

Required products :

  • 35 grams of butter
  • 3 stalks of leeks, cut into 2-3 cm pieces
  • 1/2 small pumpkin, cut into cubes
  • 1 tablespoon flour
  • 200 milliliters of vegetable broth (prepared from half a cube of broth)
  • 200 milliliters of fresh milk
  • 1 tablespoon wholemeal mustard

for sprinkling:

  • 110 grams of cold butter, chopped
  • 250 grams of flour
  • 2 tablespoons parsley, chopped in bulk
  • 1 teaspoon mustard powder
  • 30 grams of grated cheddar

Method of preparation :

Put the butter, pumpkin and leeks in a large pan and simmer for 8-12 minutes until soft, stirring occasionally. It is important to be careful not to brown the vegetables, the goal is just to soften them.

Put the flour in them, mix and pour the broth, milk and mustard. Let it simmer on the stove for 5 minutes, then transfer to a pan. Leave to stand for 10 minutes.

Meanwhile, prepare the sprinkles. Mix the butter with the flour and when it crumbles, add the parsley, mustard powder and cheese. Stir well.

Sprinkle the vegetables and bake for 30 minutes at 180 degrees.
