Required products :

  • 450 grams of raw sausage
  • 2 tablespoons butter
  • 1 large onion, thinly sliced
  • 1 packet of frozen spinach (about 300 grams)
  • 3 bagels - 2-3 days or a few slices of bread
  • 2 large diced tomatoes
  • 1/4 tea cup chopped fresh basil leaves
  • 1 cup grated Parmesan cheese
  • 1 1/2 teaspoons grated Gruyere cheese
  • 1 1/2 teaspoons grated cheddar
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 8 eggs
  • 2 teaspoons fresh milk
  • 1 teaspoon cream
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoon hot red pepper
  • 250 grams of melted cheese, cut into cubes

Method of preparation :

In a hot pan, fry the sausages until done - for about 12 minutes. Put them on a board and cut them into slices about 2 inches thick. Transfer them to a bowl and leave.

Melt the butter in the same pan in which you fried the sausages. Add the onion and fry until golden and caramelized - about 10 minutes.

Meanwhile, drain the spinach through a clean kitchen towel. Put it in the bowl with the sausage. Add the stewed onion, the broken slices of bread (bagels), the tomatoes, the basil, the parmesan, 1 cup of the Gruyere cheese and the cheddar, salt and season with black pepper. Mix all products by hand.

Beat the eggs in another bowl, along with the cream, mustard, hot pepper, a pinch of salt and black pepper.

Grease a rectangular pan with oil and transfer the dry mixture there. Drizzle with the eggs and press so that the bread absorbs the liquid. Scatter the pieces of melted cheese and place in the refrigerator under foil for a minimum of an hour and a half (preferably overnight).

Preheat oven to 200 degrees. Sprinkle the casserole with the remaining half a cup of Gruyere and cheddar and bake for 15 minutes, then reduce the oven temperature to 170 degrees and continue baking for another 50 minutes to 1 hour.
