Required products :
300 grams of chicken liver
50 grams of butter
80 grams of onions
160 grams of carrots
60 grams of white bread
750 milliliters of port or any dry red wine
13 grams of gelatin
160 milliliters of cooking cream (35% fat)
1 protein
15 grams of grated orange peel
50 grams of
rosemary sugar , salt , grated nutmeg - to taste
Method of preparation :
Melt half of the butter and fry the chicken livers in it until completely cooked.
Heat the remaining oil in another pan and fry the chopped onions and carrots in it. Pour 3 tablespoons of wine, let it evaporate and then add the cream.
Then add the bread, sugar, spices to taste and let the mixture cook over medium heat for 15 minutes, stirring during this time.
Pour 3 grams of gelatin with cold water for 5 minutes. Pour into the vegetable combination and turn off the heat.
Once it has cooled, add the egg whites and stir.
Using a blender, grind the resulting mass together with the chicken livers.
Pour the remaining wine into a suitable container and heat until part of the amount evaporates and 2/3 of the total remains. Then add the sugar, grated orange peel, let the sauce boil for 5 minutes and add the remaining gelatin.
Turn off the heat, strain the liquid and wait for it to cool.
Once this is done, transfer the pate to a plate, give it the desired shape and pour the wine.
Refrigerate until the jelly is firm, then you can serve the appetizer.
