Required products :

  • 550 milliliters of dry Madeira, sherry or dry white vermouth
  • 30 grams of dried white mushrooms
  • 4 skinless and boneless chicken fillets weighing 180-200 grams each
  • 2.5 teaspoons sea salt (medium)
  • black pepper (ground) to taste
  • 500 milliliters of chicken broth
  • 180 grams of flour
  • 70 milliliters of oil
  • 100 grams of lean pork breast
  • 450 grams of small mushrooms (preferably brown)
  • head onion shallots
  • 1 tablespoon tomato paste
  • clove garlic
  • 2 teaspoons lemon juice
  • 2-3 stalks of fresh oregano
  • 45 grams of butter
  • 2-3 sprigs of parsley

 

Method of preparation :

Pour 500 milliliters of wine over the dried mushrooms and place the dish on the stove. Once the liquid boils over high heat, reduce the temperature and wait until the wine evaporates and remains in half (about 6-8 minutes).

Meanwhile, cut the fillets crosswise in half, cut the thin part and divide the thick one in the middle. Thus, from each piece you will get 3 steaks with approximately the same size.

Put them between two layers of plastic wrap and carefully hammer to a thickness of a centimeter and a half.

Then put the chicken in a bowl and sprinkle with 2 teaspoons of salt and 1/2 teaspoon of ground black pepper. Leave for 15 minutes.

Drain the wine from the mushrooms, using a fine sieve, gently squeeze them with your hands.

Pour the wine into a pan, add the broth and let the liquid boil over high heat. Boil it for 10-12 minutes or until about 300 milliliters remain.

Put a griddle in a tray and arrange the steaks rolled in sifted flour on it, shaking off the excess.

In a large skillet, heat 2 tablespoons of oil over medium heat and fry half of the steaks in it for about 2-3 minutes on each side. When they turn golden, remove on a wire rack.

In the remaining fat, prepare the other 6 steaks in the same way.

Cut the pork breasts into small pieces and fry in a pan at a moderate temperature until crispy (stir periodically).

Add the mushrooms, cut in four, to them. Let them cook until they turn red and the liquid evaporates, then transfer to a bowl.

In the same pan, pour a little oil and pour in the thinly sliced ​​shallots. A minute later, add the tomato puree and finely chopped garlic.

After another minute, pour the mulled wine, as well as the remaining 50 milliliters, lemon juice, put the chopped oregano leaves and mushrooms with the breast.

Once the sauce boils, put the chicken steaks in it, heat them for a few minutes on one side, turn for as much on the other and remove to a plate.

Remove the sauce pan from the heat, beat it with a wire whisk, adding the butter, cut into small pieces. Season with salt and pepper.

Drizzle the chicken with it and enjoy!
