How To Cook Chicken With Olives And Pasta In Sicilian - Recipe

Learn how to cook "Chicken with olives and pasta in Sicilian style". Delicious recipe.

This spicy chicken dish is prepared with tomatoes, spinach, olives and capers. Try Kalamata olives instead of greens or combine them. Serve on wholemeal egg pasta with a salad of lettuce on the side.

Required products :

  • 1 can of diced tomatoes with garlic and olive oil
  • 1 and 1/2 teaspoons spinach, chopped
  • 1/3 tea cup kalamata olives (can green or other Greek olives)
  • 1 tablespoon capers, rinsed
  • red pepper to taste
  • 4 chicken cutlets
  • black pepper to taste
  • 1 tablespoon extra virgin olive oil

Method of preparation :

Stir in the tomatoes, spinach, olives, capers and paprika.

Season the chicken chops with black pepper on both sides. Heat olive oil in a large skillet over medium heat and bake the chops for about 2 to 4 minutes on each side or until browned.

Drizzle with the tomato mixture and reduce the heat, cover and cook until the chicken is cooked, then serve with cooked wholemeal pasta and mixed lettuce.
