How To Cook Chocolate Cake With Cottage Cheese And Waffle Base - Recipe

Required products :

  • 480 grams of dark chocolate (70% cocoa)
  • 500 grams of high-fat cottage cheese
  • 1.5 teaspoons of sugar + 2 more tablespoons
  • 4 large eggs
  • 2 tablespoons cocoa powder
  • 300 grams of chocolate waffles or wafer crusts
  • 50 grams of butter
  • 50-70 milliliters of liquid cream with 22% fat


Method of preparation :

Grind the waffles / wafers with a blender, turn off the appliance and then add a cup and a half of sugar and softened butter. Then beat until a homogeneous mass, which is distributed evenly on the bottom of a pre-greased and covered with a greased sheet of parchment detachable cake tin with a diameter of 24 centimeters. Press the base well to the dish to make it thick, and bake it for 5-7 minutes in the oven at 200 degrees.

Remove the form, but do not turn off the oven.

Take care of the stuffing.

Break 300 grams of chocolate into small pieces, which you melt in a water bath, removing the pan from the heat when small unmelted pieces remain. Leave for a while until they are completely liquefied. Wait for the chocolate to cool a bit.

Pass the curd in front of a sieve, then beat it with a blender together with 1 tablespoon of sugar and cocoa. Add the eggs one by one without turning off the appliance. You should pour the chocolate into the resulting mixture and stir.

Spread the filling evenly on the waffle iron and place the form back in the oven.

Reduce to 180 degrees and bake the dessert for an hour. When the finished cake has cooled to room temperature, store it in the refrigerator overnight.

The next day, break the remaining 180 grams of dark chocolate, mix them with liquid cream and add 1 tablespoon of sugar. Place the dish on the hob until the products turn into a homogeneous cream, which is left to cool.

Cover the cheesecake with it and return it to the fridge.

After an hour, remove from the pan using a sharp knife, and you can enjoy the dessert when it reaches room temperature.
