Necessary products :
1 1/4 tea cup of flour

  • 1/2 cup unsweetened cocoa
  • 1/2 teaspoon baking powder, baking soda and salt
  • 1 teaspoon sugar
  • 3/4 tea cup of fresh milk
  • 1 egg
  • 1/4 teaspoon canola oil (or sunflower)

for the glaze:
3 proteins

  • 3/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cream tartar
  • 1 drop of mint extract
  • 1/4 teaspoon cream
  • 1/2 tea cup milk chocolate chips

Method of preparation :

Preheat the oven to 170 degrees and grease a round 18 cm pan, sprinkle with flour. Place a sheet of round parchment on the bottom. Set aside.

Sift the flour with the rest with the leavening agents and salt, add the sugar and stir to mix well. Make a well in the center and pour the milk, egg and oil there. Stir with a mixer until the ingredients are combined. Transfer the dough to the prepared pan and bake in the oven for 30 minutes, until dry. When the cake is baked, leave to cool completely. Then remove from the pan and peel off the parchment sheets. Place the cake in a serving platter.

For the cream, mix the egg whites with the sugar, salt and cream tartar in a glass bowl. Place the pan on a pot of hot water on the hob (let the bowl not touch the water) and let the mixture cook, stirring occasionally, for 10 minutes. Transfer the warm mixture to a mixing bowl and beat for 10 minutes to obtain a creamy, airy mixture. Add the mint and stir to absorb the mixture.

When you are ready to serve, put the cream on the cake, you do not need to smear the sides.

Heat the cream and pour over the chocolate, leave for a few minutes to relax and stir until combined.

When serving, pour each piece with chocolate glaze.
