Required products :

  • 1 cup of toasted sugar *
  • 2/3 tea cup of cocoa
  • 1/4 teaspoon salt
  • 4 teaspoons fresh milk
  • 3/4 teaspoon cooking cream
  • 1 1/4 tea cup whipping cream

Method of preparation :

In a pan, mix the sugar, cocoa and salt. Mix well and add the milk and cooking cream. Stir well and leave on the stove at medium heat.

 

Boil the mixture for a long time, stirring occasionally. When the cream thickens and is reduced to 2/3 of its original amount, it will acquire a pleasant dark chocolate color.

Transfer to a cold pan to speed cooling.

 

Whip the confectionery cream and after the chocolate mixture has cooled, gradually add it, stirring with a spatula.

 

The cream is ready!

* Prepare the toasted sugar by placing it in a pan and bake it at 177 degrees for 30 minutes. During this time it will acquire a pleasant caramel aroma and will darken slightly.
