How To Cook Cooked Veal Liver In Onion And Mustard Marinade - Recipe

Required products :

  • 500 grams of beef liver
  • 2 heads of old onions
  • 75 milliliters of oil
  • 1 tablespoon (without tip) mustard
  • 1/2 teaspoon black pepper (or to taste)
  • 1-2 tablespoons of vinegar
  • sugar and salt to taste
  • green onions for decoration
  • boiled potatoes for garnish


Method of preparation :

Wash the liver, remove all unnecessary membranes and veins from it and boil for 40-50 minutes in salted water. If you use beef offal, you can let it stand for a few hours in fresh milk.

When the liver is cooked, remove it from the broth to cool, while making the marinade.

Pour in a suitable bowl the oil and vinegar, add the mustard, pepper, sugar and salt to taste, mix until smooth.

Cut the onion into semicircles, pour it into the sauce, stir and wait 10-15 minutes.

Meanwhile, cut the liver into thin pieces (like petals - the thinner they are, the better they will marinate). Put them in the marinade, stir to cover with it and place for 2-3 hours (or preferably overnight) in the refrigerator.

Serve the dish with a garnish of boiled potatoes, garnish with chopped green onion feathers.
