Interesting facts about casseroles

Cottage cheese casserole is one of the most favorite dishes of both adults and children. Juicy, tender, lush and tasty, everyone remembers it from childhood and does not cease to like it when you become adults.

But in order for the casserole to turn out to be truly tasty and tender, several nuances should be taken into account:

- For casseroles, choose fresh cottage cheese. It is better if the curd is slightly sour rather than neutral. Then the casserole will have a more expressive taste. A casserole can also be prepared from low-fat cottage cheese, but the most delicious cottage cheese casserole is obtained from medium-fat or fatty cottage cheese;

- low-fat cottage cheese can be improved by adding sour cream or a small amount of butter to it;

- eggs give the casserole airiness and hold all the components together. Do not increase the number of eggs indicated in the recipe. By increasing the number of eggs, you will not get a more tender and airy casserole, but on the contrary, you will make it harder, it will become rubbery. For 250 grams of cottage cheese, 1 medium-sized egg should go;

- it is better to divide the eggs into yolks and whites, and beat the whites into a stable foam and carefully introduce them into the dough last;

- to make the casserole more juicy, semolina is introduced into it. After adding semolina to the dough, it should stand for at least 20-30 minutes for the semolina to swell. After that, enter the whipped proteins and send the casserole to the oven. At the rate of 250 grams of cottage cheese, add 1-2 tablespoons of semolina (depending on the moisture content of the cottage cheese); instead of semolina, you can add semolina, starch, flour, cereal, dry pudding powder;

- sour cream, yogurt, kefir are often introduced into the curd casserole so that the casserole has the consistency of medium liquid sour cream;

- be sure to grease the casserole dish with butter and, if desired, sprinkle with semolina, breadcrumbs or flour;

- the best form for cottage cheese casserole is cast-iron or ceramic;

- at your discretion, you can add dried fruits, berries to the casserole (they must first be washed, sprinkled with flour or starch), cereal;

- cottage cheese casserole can be both sweet and salty according to your desire.
