Required products :

250 grams of spinach
2 cloves garlic
1 onion
40 grams butter
40 milliliters of olive oil
200 milliliters of chicken or vegetable broth
150 milliliters of liquid cream with a fat content of 22%
3 eggs
1 stalk of thyme
salt and ground black pepper

 

Method of preparation :

Mix the butter and olive oil in a suitable bowl, heat them and add a sprig of thyme, crushed garlic cloves and let the combination remain on the stove until it acquires a golden color and a pleasant aroma.
When this happens, remove the thyme and garlic from the fat and add the peeled and chopped onion, which you fry until golden. Then add the chopped spinach and let it simmer over medium heat for about 3 minutes. Pour the broth, cream and a few minutes after boiling the mixture, remove the pan from the heat.
Transfer the soup to a blender bowl and beat. Return to the pan and season to taste. Wait for it to boil and all you have to do is knock the eggs directly into the soup.
The egg white should harden, the yolk should remain liquid.
