We present you an idea for an easy and healthy carrot soup. The ingredients are for 4 servings and the preparation will take you about 40 minutes .

 

Necessary products

  • 450 grams of carrots, peeled and cut into small pieces
  • 1 onion, finely chopped
  • 1 potato, finely chopped
  • 1 handful of fresh coriander
  • 1 tablespoon dried coriander
  • 1.2 liters of vegetable or chicken broth
  • 1 tablespoon oil

 

Method of preparation

 

Put a large saucepan on the stove and heat the oil in it. Add the onion and fry for 4-5 minutes until soft. Pour the potatoes and dried coriander, stir and cook for another 1 minute.

Add the carrots and broth to the pan and stir. Bring to a boil and reduce the temperature. Put the lid on the pan and simmer for 20 minutes until the carrots are soft.

Beat the soup in a blender together with the fresh coriander. A thick cream should be obtained. Add salt and pepper to taste, heat and serve in a suitable dish. Enjoy your meal!
