Peel a squash, grate it and squeeze the juice. Put them in a piece of cheesecloth, add the grated onion and strain the water.
Add salt, pepper, egg, parmesan and flour to the mixture. Stir, scoop with a spoon and fry in hot oil. Drain on paper, place on a plate and serve. Optionally, garnish with a sauce of your choice - garlic, cream, mustard or other.
