Required products :

  • 800 grams of potatoes
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder
  • 160 grams of diced ham
  • 1/4 tea cup peas, boiled or canned
  • 1 tablespoon chopped green onions
  • 2 eggs, lightly beaten
  • 1/4 teaspoon oil
  • salt and pepper to taste

Method of preparation :

  • Wash, peel and grate the potatoes.
  • Transfer them to a sieve placed over a large bowl and press them with the back of a spoon to drain as much as possible.
  • In a deep bowl, mix the flour, baking powder, ham, peas and onions.
  • Season with salt and pepper and add the eggs and potatoes. Stir well.
  • Heat the oil in a pan over medium heat.
  • Shape the potato pancakes by scooping 2 tablespoons of the mixture. Slightly flatten with a spoon.
  • Fry for about 1-2 minutes on each side until golden brown. Repeat with the remaining dough.
  • Remove the finished pancakes with a slotted spoon and leave them on kitchen paper to drain off excess fat.
  • Serve warm, garnished with milk sauce or other as desired.
