Put all the ingredients in a blender and grind until smooth.

4. Muffins with blueberries and maple syrup

 

Wholemeal flour and flaxseed give blueberry muffins a pleasant nutty taste. Compared to the traditional muffin recipe, these contain 4 times more fiber, but also healthy fats (coconut oil).

Required products :

  • 1/3 cup flaxseed
  • 1 cup wholemeal flour
  • 3/4 cup + 2 tablespoons universal flour
  • 1 and 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup maple syrup or honey
  • 1 cup skim milk
  • 1/4 cup coconut oil
  • 2 teaspoons orange peel
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups fresh blueberries

Method of preparation :

Preheat oven to 200 degrees.
Grease muffin tins with coconut oil. Grind flaxseed. In a large bowl, combine the flaxseed, wholemeal and all-purpose flour, baking powder, cinnamon, baking soda and salt. Stir until the ingredients are mixed.

In another bowl, beat the eggs and maple syrup until smooth. Add the milk, coconut oil, orange peel,
orange juice and vanilla and mix until smooth.

Add the wet ingredients to the dry ones and mix with a spatula until smooth. Pour the blueberries and mix gently.

Pour the mixture into the muffin tins and bake until golden brown for about 15-20 minutes. Leave to cool and serve to children for breakfast or put in a school box.
