Required products :

  • 80 milliliters of milk
  • 80 grams of flour
  • 80 milliliters of water
  • 80 grams of butter
  • 3/4 teaspoon sugar and salt
  • 2 eggs
  • 150 grams of powdered sugar
  • red food coloring
  • 100 grams of strawberry jam
  • 100 grams of fresh strawberries
  • 300 grams of whipped cream
  • 1 teaspoon vanilla paste
  • sugar sprinkle for decoration

Method of preparation :

Put 80 milliliters of milk, 3/4 teaspoon of salt and sugar, along with 80 grams of butter and 80 milliliters of water in a saucepan and heat until the liquid boils. Remove from the heat and add the flour, then stir to make a homogeneous mixture. Return to the hob and stir continuously for another 2 minutes until the dough begins to form into a ball.

Transfer to a bowl and allow to cool.

Beat 2 eggs and add them in portions to the flour, stirring constantly. You should get a sticky dough, thicker than cake.

Transfer it to a bag with a suitable tip.

Line a baking tray with parchment paper, "gluing" the paper itself to the pan with some of the dough - put it in the four ends of the pan, and place the paper on top.

Inject eclairs about 10-12 centimeters long.

Bake them at 160 degrees for 30-35 minutes, until they swell, become golden and crispy. Turn off the oven and leave the eclairs inside to cool for 20 minutes.

Cut each lengthwise, if possible using a serrated knife.

Beat 150 grams of powdered sugar with 30-35 milliliters of water and turn pink with food coloring. Dip the eclairs on top in the glaze and arrange in a pan, sprinkle with colored sugar decorations.

Spread the bottom of the eclairs with strawberry jam. Finely chop half the strawberries and place them on top of the jam.

Whip the cream with the vanilla and transfer to a star-tipped pouch.

On the jam make 4 piles of cream, between which put a thin slice of strawberries.

On top, place the upper pieces of eclairs, which have a pink glaze.
