How To Cook Fusilli With Two Types Of Cheese And Pickled Tomatoes - Recipe

Required products :

  • 600 grams of diced tomatoes
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, chopped
  • 1/2 teaspoon salt
  • 220 grams of whole grain fusilli (or other type of pasta)
  • 1 teaspoon Fontina cheese, chopped
  • 1/2 cup full-fat ricotta cheese, at room temperature
  • 2 tablespoons + 2 teaspoons extra virgin olive oil
  • 1/4 tea cup fresh basil, chopped
  • ground black pepper to taste

Method of preparation :

Bring a large saucepan of water to a boil.

In a large bowl, combine the tomatoes, vinegar, garlic and salt. Set aside for a few minutes to marinate.

Cook the fusilli according to the instructions on the package. Set aside 1/2 cup of the water in which you boiled them and drain them. Return the pasta to the pan and add the fountain cheese and the reserved water, stirring constantly until the cheese melts.

Add the ricotta and serve in bowls. Using a slotted spoon, garnish the fusilli with the pickled tomatoes. Season with olive oil and sprinkle with fresh basil and black pepper.
