How To Cook German Pastry Cook With Grapes And Pears - Recipe

Required products :

  • 1/2 cup hot milk (heated to 100-110 degrees)
  • 2 1/4 teaspoons dry yeast
  • 1/2 cup powdered sugar
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 eggs
  • 2 cups flour
  • 6 tablespoons butter, soft
  • 1 1/2 cups red seedless grapes
  • 2 ripe pears, peeled and cut into slices
  • 1/4 cup walnuts, crushed
  • 3 tablespoons brown sugar
  • 1/2 teaspoon cinnamon powder
  • 1 1/2 cups whipped cream

Method of preparation :

Mix the milk, yeast and 1/2 teaspoon powdered sugar and stir. Leave to stand for 5 minutes.

Add the remaining powdered sugar, 1 tablespoon olive oil, vanilla extract, lemon zest, salt, nutmeg and eggs and beat with a mixer on low speed until mixed. Without stopping the mixer, pour the flour and stir for 5 minutes, add 5 tablespoons of butter, spoon by spoon. Pour the mixture into a greased and covered with baking paper pan. Cover and leave to rise in an oven preheated to 85 degrees.

Remove the risen dough and increase the oven temperature to 230 degrees. Combine the remaining 1 tablespoon of olive oil, grapes and pear. Arrange evenly on baking paper and bake for 20-25 minutes or until soft. Cool the fruit.

Reduce the temperature to 180 degrees.

Melt the remaining 1 tablespoon of butter and mix with the grape mixture, butter, walnuts, brown sugar and cinnamon. Arrange the mixture on the dough and bake for 30 minutes or until done. Cool, cut into pieces and serve with whipped cream if desired.
