Required products :

  • 1 pineapple (peeled, cleaned of all hard parts and cut into large cubes)
  • 1 red dried chili pepper
  • 1 tablespoon powdered sugar

For syrup:

  • 100 milliliters of rum (light)
  • 100 grams of powdered sugar
  • 3 cm chopped ginger root
  • 1 stalk of lemongrass
  • juice and peel of 1 lemon and 1 lime
  • 1 dried red chili pepper
  • 200 milliliters of water

 

Method of preparation :

Pour the water into a saucepan, add rum, powdered sugar, chopped ginger root, a sprig of lemongrass (or use crushed dry), grated rinds of 1 lime and 1 lemon, and citrus juices. Put 1 dry chili pepper and place the dish on the stove.

Bring the liquid to a boil over medium heat. Once the sugar has melted, remove the pan from the heat, allow the syrup to cool and strain it.

Put the pineapple pieces in the syrup and let them marinate for 8 hours.

Crush the dried chili pepper with a little salt. Add enough sugar to achieve the preferred balance between sweet and salty.

Sprinkle this mixture on the pineapple and grill for about 5-10 minutes (until caramelized).

Serve the fruit bites strung on bamboo skewers.
