Required products :

1 pineapple

1 hot dried red pepper

1 tablespoon powdered sugar

 

For syrup:

200 milliliters of water

100 milliliters of light rum

100 grams of powdered sugar

3 cm ginger root

lemongrass stalk

juice and peel of 1 lemon

 

Method of preparation :

Peel a pineapple and cut it into pieces, then start making the caramel syrup.

Pour 200 milliliters of water into a saucepan, add rum, powdered sugar, chopped ginger and lemongrass, juice and grated zest of sour citrus. Bring the mixture to a boil over medium heat and when the sugar has melted, remove the pan from the heat. Once cool, strain the liquid.

Pour the pineapple pieces into the syrup and leave to marinate for 8 hours or overnight.

Crush the dried hot pepper in a mortar together with a little salt. Use a little sugar (enough to balance the taste). Sprinkle the pineapple with the mixture.

Heat the grill.

String the pieces of fruit on skewers and bake for 10-15 minutes, turning them on both sides until caramelized.

 

You can serve with ice cream and / or fresh fruit.
