How To Cook Grilled Cauliflower With Beans And Almond Pesto - Recipe

Suitable quick recipe for vegans and vegetarians. It cooks in less than 30 minutes.

Required products :

  • 1/2 cup almonds
  • 5 tablespoons parsley, chopped + for garnish
  • 2 tablespoons wild onion, chopped + for garnish (maybe green onions)
  • juice and zest of 1 lemon
  • 5 tablespoons extra virgin olive oil
  • 1 tablespoon salt
  • 2 large heads of cauliflower
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 2 medium onions, chopped
  • 1 clove garlic, chopped
  • 2 cans of oil beans, rinsed
  • 1/2 cup water
  • black pepper to taste
  • 2 teaspoons sherry vinegar

Method of preparation :

Turn on the grill to heat.

almond pesto

Blend the almonds in a chopper, 4 tablespoons parsley, basil, chives, lemon peel and juice, 2 tablespoons olive oil and salt to taste.

cauliflower

Place the cauliflower on a cutting board and cut 4 pieces from the center of each head. Save the remaining cauliflower for another dish. Season the pieces with olive oil. Mix in a small bowl the smoked paprika, garlic powder and salt to taste. Season the cauliflower with the resulting mixture and grill it until soft. Turn to bake well on both sides. 

the beans

Heat 1 tablespoon olive oil in a saucepan over medium heat. Fry the onion and garlic until soft, then add the beans, water, smoked paprika and salt to taste. Stir occasionally for about 5 minutes, then remove the pan from the heat and season with vinegar and parsley.

Serve the beans in a plate and place the cauliflower on it. Garnish with almond pesto.
