How To Cook Grilled Vegetables With Mint Sauce And Yogurt - Recipe

Grilled vegetables with mint sauce and yogurt are so colorful and delicious, they are easy to prepare as a side dish to roast meat or you can just eat them.

Required products :

for the sauce:

  • 1 cup skim yogurt
  • 1/4 cup fresh mint leaves, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon extra virgin olive oil
  • salt and pepper to taste

for vegetables:

  • 2 large red and orange peppers, peeled and sliced
  • 1 red onion, cut into circles
  • 400 grams of asparagus, peeled
  • 1 yellow zucchini, cut diagonally into circles
  • 1 green zucchini, cut diagonally into circles
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Zaatar spice
  • beehive salt (or other) and pepper to taste

Method of preparation :

In a bowl, mix the yogurt, mint, half of the garlic and season with salt and pepper, stir and pour 1 teaspoon of olive oil and a little fresh mint.

Heat a grill or grill pan over medium heat and grease with oil of your choice.

Marinate the vegetables in a bowl with olive oil, lemon juice, remaining garlic, spice zaatar, salt and pepper to taste. Leave to stand for at least 1 hour in the refrigerator.

Grill the vegetables, turning them from time to time until soft or for about 10 minutes.

Serve them on a plate with mint sauce and yogurt. Optionally, serve as a side dish to roast meat, fish or other favorite dish.
