Grilled vegetables with mint sauce and yogurt are so colorful and delicious, they are easy to prepare as a side dish to roast meat or you can just eat them.

Method of preparation :
In a bowl, mix the yogurt, mint, half of the garlic and season with salt and pepper, stir and pour 1 teaspoon of olive oil and a little fresh mint.
Heat a grill or grill pan over medium heat and grease with oil of your choice.
Marinate the vegetables in a bowl with olive oil, lemon juice, remaining garlic, spice zaatar, salt and pepper to taste. Leave to stand for at least 1 hour in the refrigerator.
Grill the vegetables, turning them from time to time until soft or for about 10 minutes.
Serve them on a plate with mint sauce and yogurt. Optionally, serve as a side dish to roast meat, fish or other favorite dish.
