Required products :

  • 1/3 tea cup flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons sugar
  • 4 eggs at room temperature
  • 1 kg of carrots, cut into cubes

Method of preparation :

  • Preheat the oven to 180 degrees and grease a pan with oil.
  • Boil the carrots in boiling water or steam, drain and mash them with a fork.
  • Transfer the carrot puree to a medium bowl.
  • Add the eggs one at a time, beating the mixture with a mixer after each addition.
  • Add baking powder, vanilla and sugar.
  • Add the flour and mix with a wooden spoon without overdoing it.
  • Pour the dough into the pan and bake for 30 minutes.
  • Allow the carrot pudding to cool briefly before slicing and serving.
