Required products :

  • 4 eggs, lightly beaten
  • 1/4 teaspoon + 2 tablespoons whole coconut milk
  • 3 tablespoons melted coconut oil
  • 3 tablespoons apple juice
  • 1/2 cup coconut flour
  • 1 tablespoon coconut sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • coconut oil for the pan

Method of preparation :

 

  • In a large bowl, mix the beaten eggs with the coconut milk, melted coconut oil and apple juice. Stir and set aside.
  • In a small bowl, combine the coconut flour, sugar, baking powder, cinnamon and salt.
  • Add the dry to the wet ingredients and mix until smooth.
  • Let the pancake batter rest for 5 minutes.
  • Melt a little coconut oil in a pan over medium heat.
  • Pour 1/2 cup of the mixture and bake the pancake for about 3 minutes until golden brown.
  • Carefully turn it over and bake for another 2 minutes. Repeat with the remaining dough.
  • Serve the coconut pancakes warm, garnished to taste.
