Dandelions, harvested from ecologically clean areas, are used in folk medicine in the fight against a number of diseases. We suggest you make homemade honey from the medicinal plant, even if you do not believe in its useful effects, because the sweet finished product you will receive will win you over with its pleasant taste.

Dandelion honey with sugar syrup (yellow leaves only)

Necessary products for the preparation of dandelion honey:
  • 350-400 dandelion flowers (yellow parts only)
  • 1 kg of sugar
  • 2 teaspoons water
  • juice of 1/2 or 1 lemon
How to make dandelion honey

Boil syrup from water and sugar. From the dandelions take the flowers, only the yellow part is used. Put them in the syrup and cook for 20 minutes. 2-3 minutes before the end of cooking, add the lemon juice. Remove the pan from the heat and after the jam has cooled, strain it with a strainer or gauze. Distribute in jars and sterilize.

Dandelion honey with whole flowers

You can make honey from the plant without removing the green part of the flowers, but then it is necessary to rinse the dandelions several times, then pour water over them and leave in it overnight or preferably overnight. This will remove the bitterness that the plant imparts. Place a plate on the heads so that they do not float, and change the water 2-3 times, regardless of whether the flowers will stay in it at night or all day.

When this time has elapsed, rinse the dandelions again, put them in a saucepan, fill with water and put the saucepan on low heat. When the contents boil, reduce the temperature to a minimum and cook for a quarter of an hour. Remove the pan from the heat and allow the mixture to cool completely.

Drain the liquid with gauze, add sugar, lemon juice (you can use the juice of half a citrus and 1/3 teaspoon lemon juice).

Put the pan on low heat and cook for an hour, stirring occasionally.

After the specified time, remove the pan from the heat and distribute the honey in pre-prepared and sterilized jars, which close immediately.

Cooking time is approximate, observe the consistency of the jam. It should not be too thick, because then the honey will crystallize (sucrose). If it is very liquid, the sweetness can become sour.

 

Dandelion honey, prepared without boiling

Aromatic honey from the plant can be prepared without boiling (cold technology). Thus, all the useful properties of dandelion will be preserved in the finished sweet product . The recipe for making honey is easy, but you have to be patient with the preparation of the flowers, because they require a little more attention. It also takes time for the jam to be completely ready.

  • Get 500 grams of dandelion flowers and 750 grams of sugar.
  • Once you have gathered enough of the plant and cut only the flowers with scissors, you should separate the yellow petals from them and put them in a jar.
  • If you separate the yellow part from the green, it is enough to rinse the petals with cold water, because only the flowers will not have bitterness.
  • Sprinkle them with sugar. You can replace the sweet crystals with liquid honey and stir.
  • Leave the mixture to stand for three days, stirring it several times a day (the sugar should dissolve). If you use honey, daily stirring is not necessary.
  • Then distribute the dandelion honey in small jars, which must be dry and sterilized. Close them and turn upside down. Leave for two weeks.

The honey is ready. You can now consume or store in the refrigerator for storage.
