What is the perfect way to bake pizza? Undoubtedly the answer is one - 400 degrees in a wood stove. The high temperature provides a crispy crust, and the pizza itself is ready in minutes.
The difference between the oven and the oven is not only in the temperature, but also in the baking surface itself. The pizza stone is like the baking stone, but the main difference is in the shape - for pizza it is often round. So it doesn't matter what shape you choose. The point is to buy this type, which is as thick as possible - the thicker the stone, the better it "works", the more durable and more expensive it is. The downside is that it heats up a little slower. So, if you have a choice, take the most expensive and thick stone you can afford.
The stone does more than give off heat. You can hear from different people that the stones absorb moisture, so you get a crispy crust. In fact, this is not the case. Just when it is very hot, the moisture directly turns into steam, which evaporates, of course, and is not absorbed anywhere.
Unlike metal trays, stone has small cracks that allow moisture to evaporate, while smooth metal surfaces trap moisture, making it wet rather than crunchy.
Follow a few steps before baking the pizza:
It is very important to follow the rule of placing the slab in a cold oven and then heating it, otherwise you risk the stone cracking from thermal shock. It's also not a good idea to bake frozen pizza on it.
It's no problem to store the pizza stone in the oven all the time, especially if you use it often. If you decide to keep it in a cupboard, follow the requirement not to wash it and at the same time be careful not to break it.
