Required products :

  • 1 small head of cauliflower (about 500 grams)
  • 3 stalks of celery
  • 1 red pepper
  • 6 carrots
  • 1 onion
  • 1 3/4 tea cup white wine vinegar
  • 1 1/2 teaspoon water
  • 2 teaspoons sea salt (or other non-iodized)
  • 1 tablespoon sugar (or 2 teaspoons honey)
  • 1-2 cloves garlic (peeled and lightly crushed)
  • 1 bay leaf
  • 1 small hot pepper if desired
  • 1/2 teaspoon mustard seeds
  • 4-6 grains of black pepper
  • 3 tablespoons olive oil

Method of preparation :

Wash the vegetables and remove the hard part of the cauliflower. Use only the roses, which you cut into 2-3 cm pieces.

Cut the celery into pieces about 2 centimeters thick.

Peel a squash, grate it and cut it into strips.

Cut onions into thick crescents.

Mix water with vinegar, salt, sugar (honey) in a large saucepan. Put the vegetables inside and place on a hot plate. Cook for 5 minutes.

Meanwhile, put the hot pepper, garlic, bay leaf, mustard and black peppercorns in a clean large jar.

Remove the vegetables with a slotted spoon and transfer them to the jar. Pour the hot liquid, the purpose is to cover the vegetables, but at the same time to leave a few inches from the edge of the jar empty.

Drizzle carefully with olive oil to seal the pickle. Store in a dark and cool place for 2 weeks, then store in the refrigerator.
