How To Cook Kataef - Arabic Pancakes With Yeast And Cream Filling With Fruits And Nuts (without Eggs) - Recipe

Required products :

  • 240 grams of flour
  • 20 grams of sugar
  • 250 milliliters of fresh milk
  • 250 milliliters of warm water
  • 7 grams of dry yeast
  • 7 grams of dough leavening agent
  • 4 canned peaches
  • 300 grams of confectionery cream (or cream topping)
  • walnuts


Method of preparation :

Pour a glass of warm water into a suitable bowl, add sugar and yeast, leave for 10 minutes.

Then stir, pour the warm milk and pour the flour (pre-sifted) with baking powder.

Beat the mixture with a food processor so that no lumps form.

In a hot pan, pour half a ladle of the dough (make small pancakes, do not grease the pan). When the liquid is no longer sticky, use a spatula to immediately remove the pancake from the pan. Continue in the same way with the rest of the dough, and you can bake two pancakes at the same time in the pan.

Arrange the finished ones on a plate, not placing them on top of each other so that they do not stick together.

Once cooled a bit, fold them in half and glue half of the "edge" with your fingers (as seen in the next photo).

Whip the cream, add the chopped canned peaches. Fill the pancakes with this delicious combination and sprinkle with crushed walnuts.
