Khinkali is a Georgian dish. They are somewhat similar to dumplings, only larger in size and with minced meat. Traditionally, minced meat for khinkali is made from beef and pork, and the meat is cut with a knife, rather than using a meat grinder.
When khinkali are cooked, they are doused with cold boiled water. This is done so that they do not stick to each other when laid out on a dish.
They eat khinkali by holding them by the tail. If the tail of khinkali is hard, then they do not eat it, but leave it on the edge of the plate. Khinkali is steamed or boiled in plenty of water. If you need to cook a large number of khinkali, then boil them one by one, several pieces in the same water.
The broth remaining after cooking can then be used to make a light soup. It is delicious to serve them with butter, sprinkled with black pepper. You can store boiled khinkali in the broth in which they were cooked for no more than 2 days.
